| Instructions | Cut washed, unpeeled aubergines lengthwise into 1/4 " slices. |
| Cut slices into 2 1/2 " lengths. |
| Heat oil in frying pan, cook for 5 minutes or until aubergine is |
| soft. Remove from pan with slotted spoon, repeat with |
| remaining aubergine. |
